1/4 cup olive oil, extra virgin

6 cups sweet potatoes, spiralized
3 pints cherry or grape tomatoes, halved
2 tbsp tomato paste, unsalted
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
24 pitted kalamata olives, chopped
3 tbsp capers
1/8 tsp salt

Instructions

Heat a large high-sided sauté pan over medium heat. Add oil to pan; swirl to coat. Add garlic, anchovies, oregano, and red pepper; cook 2 minutes, stirring constantly to break up anchovies. Add stock and bring to a boil. Stir in spiralized sweet potatoes, tomatoes, and tomato paste.
Cook 2 to 3 minutes or until the sweet potatoes have slightly softened. Remove pan from heat; add remaining ingredients, tossing to combine.
