Breakfast Loaded Sweet Potato Fries Recipe For Feminine Issues
Ingredients
- 6 strips bacon, cut into 1 inch pieces
- 2 pounds sweet potatoes, peeled and diced
- 1 onion, diced
- 2 garlic cloves, chopped
- 1/2 tsp cumin, toasted and ground
- 4 eggs
- salt and pepper, for tasting
- 2 green onions, thinly sliced
- 2 tbsp cilantro, chopped
- 1 jalapeno, sliced
- 1 lime, cut into wedges
- 1/2 cup guacamole
- 1/3 cup creamy tomatillo ranch dressing
Instructions
- Cook the bacon in a skillet and set aside on paper towels to drain, reserving 2 tablespoons grease in the pan.
- Add the sweet potatoes and onions to the pan and cook until the sweet potatoes are lightly golden brown, about 5-7 minutes, mix and repeat until the sweet potatoes are tender, about 15-20 minutes.
- Add the garlic, cumin and chili powder and cook until fragrant, about a minute, before dividing the sweet potatoes and bacon between four plates.
- Fry the eggs as desired and place on the sweet potatoes along with the green onions, cilantro, jalapeno, guacamole and dressing.
